Galley Steam Kettle

A U.S. Navy galley steam kettle — the workhorse of shipboard cooking. Steam kettles like this one could prepare large quantities of food quickly, using high-pressure steam controlled by the red valves visible on the unit. Gene Slover photographed this kettle and left his own assessment of the results.

This kettle will hold about 300 pounds of spuds. The cooks say that it takes about 3 minutes to cook the spuds.

The spuds were always hard which I never considered cooked.

I guess I just don’t know how to cook.
